I decided it’s time to make a conscience effort to eating more healthy. I’ve always been conscience of what I eat but I’m in need of a lifestyle change. So, here I am under at least 30 cookbooks, plus recipes I’m finding on the internet ready to eat right without giving up the foods I love.
I’ve heard of people using pecans to coat chicken but I hadn’t tried it until tonight. Following a simple recipe, I discovered I may never go back to breadcrumb coated chicken ever again.
All you need is the following:
- 1/2 cup spicy brown mustard
- 2 tablespoons honey (this is optional, but adds flavor)
- 1 cup pecans, crushed
- 4 boneless, skinless chicken breasts
To start, preheat the oven to 350 degrees. In a medium bowl whisk together the mustard and honey.
Crush the pecans. I used my Pampered Chef Food Chopper but a food processor works just as well.
Using a paper towel, remove any excess moisture from the chicken.
One breast at a time dredge the chicken in the honey mustard mixture, make sure the coating is on both sides.
Transfer the chicken into the crushed pecans, again making sure both sides are coated.
Place chicken on a baking stone for 45 minutes. If you use a glass baking dish make sure to grease with some cooking spray beforehand.
I paired it with haricot vert with shallots.
Eating healthy has never tasted so good!
